Wild Rice Salad

Serves 4


2 cups broccoli florets, blanched
3 cups wild rice, cooked
1 cup carrots, sliced and blanched
1 cup zucchini, diced
⅓ cup red onion, diced
¼ cup safflower oil
2 tablespoons fresh dill, chopped
¼ cup plus 1 tablespoon fresh lemon juice
1 teaspoon freshly ground black pepper
1 teaspoon sea salt


  1. Combine all ingredients in a mixing bowl and toss until well mixed.

  2. Serve at room temperature.
